Sunday in the Oven

Sunday means something great to eat.. Still finishing up the painting in the hallway and closets but I decided I worked hard these last four days and needed something that would warm the tummy and feed the soul.


It is a simple recipe that you can put together with the items you already have in your well stocked kitchen..


I started by pulling off the bones the last of the tender roasted organic chicken meat. This Chicken has provided six different recipes for this gal - well worth the price. Plenty of juicy bits about 1 1/2 cups worth for this recipe. The bones went into the crock pot to start a pot of broth. I then diced a sweet onion about 2/3 cup, about 2/3 cup celery, cubed 3 small potatoes and now comes the part where you use what is in the frig. I cut one medium zucchini into the same size as the potato, I chopped one red pepper the same size cubes, then I added 2 cups frozen mixed veggies (you know the peas, carrots and corn kind) but if you have some fresh veggies that need to be used up then make this your own recipe. I then took a can of Mexican White Cheese Sauce but again you could use a homemade white sauce. I like using this because it is low in salt content and is a blank slate when cooking - also it does not curdle in the freezer. In a separate bowl I mixed the Mexican White Cheese Sauce with about 2/3 cup heavy cream. Whisk together till smooth. Now comes you taste buds. Add pepper, garlic, Maggie, chopped parsley, paprika all to taste. I left out the salt until you have everything combined because the chicken and the Cheese Sauce all have salt in them. Then combine all the ingred's and taste - adjust to your liking. With this dish I also added roasted chopped chilles about 1/4 cup but again not so much that this would become a Mexican dish.


Place all into a 9x13 greased pan and topped with a sheet of prepared puff pastry. Brush with a egg yolk and a drizzle of cream beaten together and brushed on top of puff pastry and pop into a 400 degree oven for about 30 minutes then cover with foil ) leave a bit of room or you puff pastry will end up on the foil and bake for an additional 30 minutes... Take out of oven and let it rest for 4 minutes before you dig in. This dish is delish!!!

Wow that sounds great (minus the chookies for me :). Puff pastry is a wonderful thing to have on hand, it can make just about anything from appetizers to desserts. So why do I not have any?

Dang, I sure wish the weather would cool off here, I'm so ready for casseroles and soup! I like the beautiful puff pastry top!
